Any idea why the Disco II's were run with 225 tires on the challenge? These are very thin compared to the 255's that the truck was intended for?

Quite probably to get them to 'Bite' into the mud.
OK... Not all mud is the same but more often than not, you get a thin layer of soft stuff with good, firm ground underneath. Narrow tyres dig through the soft where as wide tyres don't. Wide tyres give a larger surface area and you have the potential to get 'floatation' - A bit like aquaplaning but on mud. This is perfect for snow & sand but not necessarily good for mud!
Mind you, there is the other option that GoodYear just didn't make them in that size. :D
