Just a couple of things that I did notice - I know there are a lot of very knowledgeable people on here, and I certainly don't claim to be an expert...but!
1) If you are ever in that situation, don't sit on the roof during a recovery :) Particularly a winch recovery - can't see if it's plasma or wire, but even still theres a lot of tension built up due to the mud - and shackles probably hurt :D. Also, with the wipers going (possibly faulted on, or left on) if you slip backwards, they will give you a good solid whack across the legs and won't stop....Small, but very sharp metal when snapped I would think!
2) If you are in a vehicle with manual windows, the moment the water starts entering the cab and you know its hopeless. wind them down, and if possible open the door slightly - you don't know how deep you're going to end up, and you can't open windows underwater until the cab is entirely full.
3) If you are in a vehicle with electric windows and electric locking doors, open the door and get out immediately. If you try to get out via the window later, it may start to close on you as the electrics short out. You can't rely on the safety to stop it either for the same reason. Plus, if you get out, what if there is someone who gets trapped in behind you? You can't break glass underwater easily because you can't get the speed up to shatter it.
No matter what, ALWAYS carry a break glass hammer. Its the only thing that will work in almost all situations. Personally i've gone for this one from halfords http://www.halfords.com/webapp/wcs/stores/servlet/product_storeId_10001_catalogId_10151_productId_158591_langId_-1_categoryId_49102 because it's orange! Since the horrifying event that happened to a popular LR chap (and friend of a friend) last summer I even have one in the wife's car (which is just a regular car) as you never know when you may get trapped in a vehicle and can't operate the windows due to no battery power - i.e. accident/collision.
